Eggplant in the oven with flour, salt, and sunflower oil

A friend of mine showed me this amazing and simple recipe with eggplant. So, get a tray and put some sunflower oil in it so that the eggplant doesn’t stick. Cut eggplant into circles. On each slice put a little bit of salt on both sides and roll in the flour. Put the circles in the tray so that they don’t overlap. Put some sunflower oil on top of each slice. Bake for 20-25 minutes at 230°C with a fan.
